Curry in a Hurry

Living the bachelor life aint easy. There are many challenges to overcome whilst surviving on ones own, one of which is eating.
Now I always find cooking a heck of lot easier when theres more then yaself to appreciate your hours slaving away in the kitchen. So after ensuring that at least someone would be joining me for dinner tonight via the miracle of short messaging services I set the plan afoot to cook my killer Thai Red Curry.
Allow me to demonstrate the miracle that is "Dingo a la kitchen"
First off, you need the ingredients for a Thai Red Curry, List is as follows:

First step is to start the rice, I prefer the absorption method as 2 of 3 people enjoying my efforts tonight had confirmed earlier. Place two cups Jasmine rice into a pot along with 3 cups water, bring to the boil then reduce to a simmer whilst covered for 12-14mins.


Whilst the rice is absorbing, you can concentrate on your curry. I find at this stage lubrication is required in the form of some German Fosters:

Take your packet of curry paste, and add to a preheated wok (or in my bachelor pads case an electric frypan). Give it a bit of a stir and burn then add one cup of coconut milk:



Bring to the boil and stir well before adding 450g of diced lamb. Mix ingredients well. At this point one should reconsult the red curry paste recipe and realise that your previous recipe was for only 200g of meat. [img]style_emoticons/<#EMO_DIR#>/mda.gif[/img] [img]style_emoticons/<#EMO_DIR#>/woot.gif[/img] Take backup packet of red curry paste and tin of coconut milk from cupboard, add to frying pan and stir well. I find the spare housemate who is drinking your becks is handy in these panic situations:


Dont forget to check on the rice:


Once meat is cooked and your 100g of red curry paste, 4 cups of coconut milk are well mixed add 300g of selected vegetables:

Simmer and stir occasionally for 10minutes until cooked. At this stage the bottle of white wine (in my choice a verdelho, but I also reccomend a strong Reisling) should be well on the way to being drunk:

Once you are happy with the reduction, reduce heat, serve rice into bowls and add the curry. Consume immediately whilst sharing the company of some good friends and the remainder of that bottle of wine.

DarkbyteOOOOOhhh red curry. How awesome is that!<br /><br />Will have to try that paste, havent seen it before. Oriental store only, or oriental section of a decent supermarket?

DingoDB: My local IGA had it on the shelf, about the only paste without additives/preservatives. It was so hot i probably coulda got away with only one and my housemate wouldn't have then been cursing my name the next morning as it found its way out (the back end <img src="style_emoticons/<#EMO_DIR#>/tongue.gif" style="vertical-align:middle" emoid="

FastgirlDAmmit..between you and DB...I need to marry you both or emply you to cook fulltime for me. Dingo you can do the curries (my peronsal fave) and DB can make me as fat as a sow with sweet.<br /><br />Love a great curry....nice pics!!
