Are we including grey imports?
There's an excellent resource for this that shows ALL bikes 250cc and under that were available for registration in Australia (locals and imports), but go me, I can't find the link.
Here's a couple of others instead:

jeez, I had a big list of bikes going back to 1988 with piccies of all of them, from memory I think there were at least 15 of them, Red Book prices ranged from $750 - $6,000, can't find were I put it, oh well someone else will come to the party

Do you want 150/125s as well? Road trails?
Well the obvious thing I would do to your Honda section is this......
Crap: CB250
Commuter/Naked: VTR250, Spada
Sports: CBR250, CBR250RR Fireblade/BabyBlade
(And the two stroke NSR150 and 250 like you already mentioned)
If noone gives you specs links for the CBRs let me know and I'll dig them up - but to find them I'll need to go back through the files rescued of my laptop that I didn't put back on and I can't be arsed! )
Kwaka:
GPX
ZZR250
Hyosung:
GT & GT-R????
Aprilia:
Uber Sports: RS250, RS125
Suzuki:
Sports: GSXR250
I'll add more as I think of them if you like? Alas I have no links for their specs but I may try to find them later for you if noone else provides them.

Pen - these two are classified as naked 'sports' bikes - all 250s could be classified as 'commuters' due to capacity...
The Spada recieved rave reviews in its day as the best handling 250 sports bike - albeit a naked one - and hence a novelty...
Honda classify the VTR250 as entry level sports - AHG and Trakdayz guys also rate the VTR250 very highly on the track (for a '250')
Yes I own a VTR250 - yes I am 'proud' - yes I am pro Honda!!!!

unfortunately ... NO
but the bike was originally designed to be a 250, but due to R and D costs they just decided the take the motor out of the frecida (spelling) and whack electric start on it.
They also make a Mito 50, i belive they are very popular in the UK along with that Aprilia RS50

I love the look of the Yami SVR250 - almost bought one for my first bike, was perhaps a little out of my intended price range at the time. Not the most powerful vtwin 250 out there on paper however, but certainly have a lovely cafe racer type look to them.
