    KFC Secret recipe. +nandos +sizzler toast

    Make your own KFC


    Genuine KFC secret recipe

    2 cups flour
    1/2 tsp salt
    1/2 tsp thyme
    1/2 tsp basil
    1/2 tsp oregano
    1 tbsp celery salt
    1 tbsp black pepper
    1 tbsp dry mustard
    4 tbsp paprika
    2 tsp garlic salt
    1 tsp ground ginger
    3 tbsp MSG (Accent)

    Mix all ingredients well in a large bowl.

    Dip chicken pieces in beaten eggs
    Then turn them over in regular bread crumbs (commercial)
    Finally plunge them in the flour-spices mixture (above)

    Heat oven to 350 degrees
    Place chicken in a tray and cover with foil (shiny side out)
    Cook 40 minutes.
    Remove the foil then cook for another 40 minutes
    Baste lightly with oil 5 minutes before the end
    Let stand 5 minutes and serve.

    If you want to do their Hot & Spicy batter, use gram (chick pea) flour. It'll turn out identical in texture.

    Nandos Knock-off...

    Chicken Peri-Peri Recipe
    Ingredients
    1/4 cup fresh lime juice
    2 tbsp cider vinegar
    1/2 tsp paprika
    1/4 tsp angostura bitters
    1 tsp hot pepper sauce, or to taste
    1 dried hot red chili
    1 fresh chili (such as jalapeno)
    2 cloves garlic
    2 lb whole chicken breast, with skin and, bone


    Directions

    Combine the lime juice, vinegar, paprika, bitters and hot pepper
    sauce in a glass baking dish.

    Wearing kitchen gloves, split the dried chili with a sharp paring
    knife and remove the seeds. Do the same with the jalapeno pepper.
    Mash the peppers with the garlic into a smooth paste using a mortar
    or an electric spice grinder. Add the paste to the lime mixture in
    the baking dish and combine.

    Toss the chicken pieces and swish them in the marinade until they are
    completely coated. Cover and let marinate overnight in the
    refrigerator.

    Remove the chicken from the marinade and grill or broil until cooked
    through and burnished, about 20 minutes on each side. Baste
    frequently with the marinade. If the chicken looks like it is
    beginning to burn, move it farther away from the heat source. Serve
    hot with chilled orange sections and plenty of napkins.

    This should be a sticky, though I did remember seeing the receipe on the net long long time ago in a galaxy..... (didn't know about the hot and spicy though)

    True that.... its a pressure deep fryer. There's no other way you'd get 4 chickens cooked all the way through in 13mins 40secs (IIRC) without it.

    Exactly. Even if we knew the secret recipe you'd still need a pressurised deep frier, and they're fucking expensive.
